1. Rinse the Rice: Place the sushi rice in a bowl and rinse it under cold water. This removes excess starch.
2. Cook the Rice: Combine the rinsed rice and water in a rice cooker. Or, bring to a boil in a pot, then lower to a simmer for about 20 minutes.
3. Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt. Heat gently until sugar dissolves. Stir this mixture into the cooked rice and allow it to cool.
