Instructions
First Step: COOK THE TORTELLINI

- Drain the Tortellini: Once the tortellini is cooked, drain the water and set the pasta aside. Keep a little pasta water in case you need to thin the sauce later.
Second Step: MAKE THE CREAMY SAUCE
- Sauté the Onion and Garlic: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until the onion is softened and translucent. Add the minced garlic and cook for another 1 minute until fragrant.
- Add the Cream and Milk: Pour in the heavy cream and milk, stirring constantly to combine. Let the mixture simmer for 2-3 minutes, allowing the flavors to meld together.

Third Step: SAUTÉ THE TOMATOES
- Cook the Tomatoes: While the sauce is simmering, heat 1 tablespoon of olive oil in a separate pan over medium heat. Add the halved cherry tomatoes and cook for about 3-4 minutes, until they begin to soften and release their juices.
- Add Herbs and Vinegar: Sprinkle in the dried thyme and optional balsamic vinegar. Stir everything together, allowing the tomatoes to cook for another 2-3 minutes. The balsamic vinegar helps to balance the sweetness of the tomatoes, but it’s optional if you prefer a more natural flavor.
- Combine Tomatoes with Sauce: Once the tomatoes have softened and the balsamic vinegar has cooked down (if using), add the tomato mixture to the creamy sauce. Stir gently to combine and let everything simmer together for another 2-3 minutes.
Fourth Step: ASSEMBLE AND SERVE
- Combine the Tortellini and Sauce: Add the cooked tortellini to the skillet with the creamy tomato sauce. Toss the pasta gently to coat it evenly in the sauce. If the sauce is too thick, you can add a bit of the reserved pasta water to thin it out to your desired consistency.
