1. Prepare the Plantains: Start by peeling the green plantains. Cut off both ends and slice along the length of the skin to remove it. Then, cut the plantains into 1-inch thick slices.
2. Heat the Oil: In a large frying pan, pour enough vegetable oil to cover the bottom of the pan. Heat the oil over medium-high heat until hot but not smoking.
3. First Frying: Carefully add the slices of plantain to the hot oil. Fry for about 3-4 minutes, or until they are lightly golden. Flip them halfway to ensure even cooking.
