– 2 halibut fillets (6 oz each)
– 1 tablespoon olive oil

– 2 tablespoons red onion, finely chopped
– 1 tablespoon fresh lime juice
– 1 tablespoon cilantro, chopped
– Pinch of garlic powder (optional)
Instructions
Creating your Grilled Halibut & Strawberry Guacamole is simple. Just follow these steps:
1. Prepare the Halibut: Rinse the halibut fillets under cold water and pat dry. Brush both sides with olive oil and season with salt and pepper.
2. Preheat the Grill: Heat your grill to medium-high heat (about 375°F–450°F). You can also use a grill pan on the stovetop if needed.
3. Grill the Fish: Place the halibut on the grill and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork.
4. Make the Guacamole: While the fish is grilling, slice the avocado in half. Remove the pit and scoop the flesh into a mixing bowl. Mash it lightly with a fork.
5. Add Ingredients: To the mashed avocado, mix in the diced strawberries, red onion, lime juice, cilantro, and garlic powder if desired. Gently stir until well combined.
6. Check the Fish: Ensure that the halibut is cooked through. If using a temperature probe, it should read about 145°F in the thickest part.
7. Serve: Place the grilled halibut on a plate and top it generously with strawberry guacamole.
