1. Prepare Sushi Rice: Rinse sushi rice under cold water until the water runs clear. Add to a rice cooker with 2 1/2 cups of water and cook according to the manufacturer’s instructions.

2. Season Rice: In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a bowl and gently fold in the vinegar mixture. Allow the rice to cool.
