1. Prepare Chicken: Slice the boneless chicken breast into thin strips. Season with salt, pepper, and cornstarch, and set aside.
2. Heat Oil: In a large pan or wok, heat the vegetable oil over medium-high heat until shimmering.
3. Cook Chilies: Add dried red chilies to the hot oil and cook for about 30 seconds until fragrant. Be careful not to burn them.
4. Add Chicken: Quickly add the seasoned chicken strips to the pan. Stir-fry for about 5-7 minutes until the chicken is golden brown and cooked through. Remove chicken and set aside.
