1. Brown the Beef: In a large pot, heat the vegetable oil over medium-high heat. Add the beef pieces and cook until browned on all sides. Remove and set aside.
2. Sauté the Aromatics: In the same pot, add the chopped onions and sauté until translucent. Stir in the minced garlic and ginger; cook until fragrant (about 1 minute).
3. Add Carrots and Potatoes: Toss in the sliced carrots and diced potatoes. Stir to combine, cooking for about 2-3 minutes.
4. Return the Beef: Place the browned beef back into the pot with the vegetables.
